Low Carb Cauliflower "Rice" Recipe

I eat this often under my crock pot meals that need something to be served under them.

1 head Cauliflower (or less or more depending on how much you need)

(1) Run the cauliflower though the shredder blade on your food processor or a hand-held grater.
(2) Microwave it in a tightly covered dish for 1 minute intervals as is (no water) just until tender [perhaps 3 to 5 minutes total] do NOT overcook it.   Alternatively, you could also steam this or saute it in olive oil or butter.

Each cup contains 5 grams of carbohydrate, about half of which is fiber so the net carbs is about 2.5 grams.
