Crock Pot Asparagus with Lemon and Garlic (low carb low calorie)



This dish just bursts of great flavor!  Its simple and I love it.  It is so tasty that I could almost make a meal of just the asparagus.  The entire dish has approx. 11 g. of net carbs.  It can be divided in 3 servings which would be about 3.7 g. of net carbs each.

Ingredients:
1 pound of asparagus spears (washed well with the bottom inch cut off) (has 8.1 g. net carbs)
2 cloves of crushed garlic (adds 2 g. net carbs)
1 tablespoon of lemon juice (.96 g. of net carbs)
1 tablespoon of olive oil
salt and pepper to taste (I just do several shakes of each)

Directions:
Place the asparagus on the bottom of the slow cooker and place the remaining ingredients on top.  Cook on low until tender crisp.

Small asparagus will take approx. 1 1/2 hours.

Larger asparagus will take approximately 2 hours.

  3. Hi, Christine! I’ve been searching for a slow cooker vegetable side dish to serve this Christmas, and have decided your recipe is perfect! Not a vegetable lover myself, this dish will be for my family, and I have a question: what size would be “small” and what would be “large”? The cooking time varies by 30 minutes depending on the size of the asparagus, so I want to be sure to time everything right for Christmas day. Thank you so much!

  4. I’ve gotta state that I was really skeptical about cooking asparagus in the crock pot. I love crock pot cooking, and own several pots in various sizes, but I’d never tried anything like this. I am giving it five thumbs up. I was super surprised that the asparagus was not over cooked, and I loved the flavor. I enjoy recipes for the crock pot that I can fix and forget, and this one was perfect. Thanks for sharing.

  1. […] Preheat oven to 350 degrees. In a bowl, mix the cream cheese and diced green onion and then divide the mixture into 4 parts. Season the butterflied chicken with garlic powder and lightly with seasoning salt. Place 1 part of the cream cheese mix into the center of each butterflied chicken breast. Fold the chicken over the cream cheese and wrap with 2 slices of bacon per piece of chicken. Place the chicken on a slotted broiler pan so the bacon grease drains when cooking.  Place in the oven on one of the lower racks (I used the second from the bottom).
