This dish just bursts of great flavor! Its simple and I love it. It is so tasty that I could almost make a meal of just the asparagus. The entire dish has approx. 11 g. of net carbs. It can be divided in 3 servings which would be about 3.7 g. of net carbs each.
1 pound of asparagus spears (washed well with the bottom inch cut off) (has 8.1 g. net carbs)
2 cloves of crushed garlic (adds 2 g. net carbs)
1 tablespoon of lemon juice (.96 g. of net carbs)
1 tablespoon of olive oil
salt and pepper to taste (I just do several shakes of each)
Place the asparagus on the bottom of the slow cooker and place the remaining ingredients on top. Cook on low until tender crisp.
Small asparagus will take approx. 1 1/2 hours.
Larger asparagus will take approximately 2 hours.
