Crock Pot Low Carb Pepperoncini Beef (Only 3 Ingredients)

Here is another easy and low carb recipe for your slow cooker.

The pepperoncini isn’t hot, but it does give the roast a little spice.

Given the long cook time of this recipe, it is also a good slow cooker meal for those who will be out of the home for 8+ hours.

The roast leftovers make the BEST quesadillas!

(1) 4 pound roast. (I used a bottom round roast, but you can use whatever is a good deal). 
8 cloves of garlic cut in half lengthwise
(1) 16 ounce jar of pepperoncini

Poke 8 holes with a knife on each side of the roast.  Stuff the holes with the garlic.  Place the roast in the slow cooker with the entire jar of pepperoncini (juice included).  Cook on low for 8 to 10 hours until the roast is very tender.

  1. Oh what a wonderful idea with the garlic! I have made a similar recipe for years with just the peppers and the beef. I never thought to push the cloves of garlic into the roast!!

  3. Did you use any type of seasoning salt at all? did it taste seasoned with just the peppers & garlic only? so there’s enough salt in the pepper’s liquid to season it good enough?

  4. My 89 year old father in law taught me the shoving the garlic into holes in the roast trick 25 years ago…he’d been doing it for ages. I am guessing cooks have been doing it for hundreds of years. He always did with pork roast. Delish!

  5. My roast is in the crock pot now but I’m not sure what to eat it with. Any suggestions? I’m going to have lots of leftovers, do you have any recommendations on different ways to prepare or serve the beef? I’m already planning to make some chilli.

      You could pair it with a big ole salad and mashed cauliflower or with your favorite veggies. The leftovers could be diced in salads or served in low carb tortillas quesadilla style.

    I made this today. I cooked on low for 6 hours and it was so overdone and dry. I’ll start checking it MUCH sooner next time.

      Your crock pot must cook very hot. Some do. 6 hours on low for a beef roast is pretty standard for most slow cookers.
