Here is another easy and low carb recipe for your slow cooker.
The pepperoncini isn’t hot, but it does give the roast a little spice.
Given the long cook time of this recipe, it is also a good slow cooker meal for those who will be out of the home for 8+ hours.
The roast leftovers make the BEST quesadillas!
(1) 4 pound roast. (I used a bottom round roast, but you can use whatever is a good deal).
8 cloves of garlic cut in half lengthwise
(1) 16 ounce jar of pepperoncini
Poke 8 holes with a knife on each side of the roast. Stuff the holes with the garlic. Place the roast in the slow cooker with the entire jar of pepperoncini (juice included). Cook on low for 8 to 10 hours until the roast is very tender.
