Ever plan to slow cook your dinner, but you forget to thaw your chicken? This is an easy dish that is made with frozen chicken breasts.
1/4 cup of olive oil
1 dry packet of Good Seasons Italian Dressing mix*
4 frozen boneless skinless chicken breasts
Juice of 1 fresh small lemon (this is a tad over 1 tablespoon)
Juice of 1/2 a small lemon
some diced fresh parsley and/or basil (optional)
Combine all of the ingredients in your slow cooker (except the “finishing” ingredients)
Cook on HIGH for 4 1/2 hours or until fully cooked and tender*
Remove all of the chicken from the slow cooker to a platter and finish it by:
- spooning some of the juice from the slow cooker over each piece of chicken
-drizzle the juice from 1/2 a small lemon over all of the chicken
-sprinkle the chicken with salt
-sprinkle fresh diced herbs over the chicken.
Carb Count: Approximately 2 grams of carbs for each piece of chicken + 1/4 of all the sauce.
If you do not want to use the dressing packet, you can make your own and just use 2 tablespoons of that (just omit the sugar) http://allrecipes.com/recipe/italian-dressing-mix/.
Cooking time may vary depending on the thickness of your chicken breasts and how hot your slow cooker cooks.
This is the new slow cooker I just got (my old one suffered an unfortunate demise). I am really enjoying it and plan to use it for years and years to come!
