I grew up eating Manwich sloppy joes. Occasionally, its still one of those things from childhood that I crave. However, 1 cup of regularly prepared sloppy joe meat has over 22 grams of carbs.
I have tried a few homemade low carb sloppy joe recipes, but either I didn’t care for the taste, they included lots of artificial sweeteners or they were pretty labor intensive. For me, I found it was better to use the Manwich sauce, but cut the carbs in the sloppy joes by more then half by doubling the meat and adding lots of fresh low carb veggies.
The end result is all the great sloppy joe taste I remember, but with less carbs. Everyone enjoyed this satisfying meal… the low-carbers and non-low carbers alike.
This recipe makes approx (7) 1 cup servings
Approx carb count: 8.8 grams of net carbs per cup of sloppy joe meat.
1 tablespoon of olive oil
(1) 8 ounce package of fresh sliced mushrooms (roughly chopped)
2 diced green peppers
1/2 cup of diced yellow onion
2 pounds of lean ground beef (I used sirloin)
1 can of Hunt’s Manwich Sloppy Joe Sauce*
(1) Saute the mushrooms, green peppers and onion in the oil in a non-stick pan on high.
The high heat will saute the veggies and steam off the extra water in them. Saute the veggies until they are lightly browned.
(2) Add the ground beef and cook until fully cooked (165 degrees). Drain well.
(3) Add the Manwich sauce to the meat and veggies and cook until heated through.
(4) Salt to taste
*You can reduce the carbs even further in this recipe by just using 1/2 a can of Manwich sauce and replacing it with or a few tablespoon of sugar free spaghetti sauce or sugar free ketchup.
