Stupid Chicken (easy) with Salsa Creme Sauce (3 ingredients – Crock Pot or Stove or BBQ)

Even when you are having “one of those days”…. you can still managed to cook some dinner in just a few minutes.  I threw this all together one day by chance… Don’t tell anyone, but I liked the sauce so much, I licked the plate… ; )

Cook your chicken in your slow cooker, oven or grill and then add the sauce.  The sauce is easy and made in the microwave.  If you are cooking your chicken in your crock pot, you will need chicken broth or some similar liquid to cook it in.

1 chicken breast with 1/4 of the sauce has approx. 2.25 grams of carbohydrates

4 boneless skinless chicken breasts
5 tablespoons of  your favorite salsa [I used Kirkland Salsa. It added 5g. of carbs]
1/2 brick of cream cheese (4 ounces) [adds 4g. of carbs]

Directions for cooking the chicken in the Crock Pot: Add your chicken to the slow cooker.  Cover it approx. 1/2 way with chicken broth or other liquid.  Cook on High until thoroughly cooked (this is about 2.5 hours in my slow cooker).  Remove the chicken from the liquid.

To Make the Salsa Creme Sauce: Add the cream cheese and salsa in a small bowl and microwave for 1 minute or until soft.  Stir the sauce and serve it over the chicken.

I usually eat this chicken over a bed of fresh lettuce.
