Low Carb Crock Pot Corned Beef and Cabbage

Once a year, I crock pot a corned beef and cabbage for tradition sake.  Honestly though, I have tried making it 10 different ways and it never tastes exceptional to me.  It was always a little to boiled and mushy for what I like.  Well, it seems I “hit the nail on the head” this year.  I was very happy how my corned beef and cabbage turned out…..finally

The cabbage was tender crisp and the meat was tender without being overcooked.   I would definitely make this again.

I made this in my 5 quart slow cooker. This dish is very low carb.

Ingredients:

(1) 3 to 4 lbs corned beef brisket
[throw out the seasoning packet that comes with it] The meat contains 0 carbs
12 ounces of beer or beef broth [I used 1 can of Michelob Ultra]
1 heaping teaspoon of Better Than Bullion Beef Base
1 teaspoon ground pepper
1 teaspoon allspice
3 cloves of crushed garlic

1 small head green cabbage (cut into 8 thick wedges – remove the outer leafs and core)
[1 cup of cooked cabbage contains 4 g. net carbs]

Directions:

Rinse the corned beef very well with water.  Add it to the slow cooker with all of the ingredients except the cabbage.  Cook on low 6 hours.  Add the cabbage wedges and cook one additional hour on low.  Trim off any excess fat after cooking and serve with whole grain mustard or horseradish sauce.  Season the cabbage if desired.
*I like my cabbage tender crisp (not soft), so I add it to the slow cooker the last hour.  If you like it soft, I would add it to the slow cooker the last 2 hours of cook time.

  1. Roasted Cabbage is also a great way to eat cabbage – my family can’t stand the “boiled” sort, but beg (embarrassingly loudly) for it in the grocery store.
