This is the way I have made hard boiled eggs for years. They come out perfect every time.
(1) Heat a pot of salted water to boiling.
If the egg gets any small cracks, having salt in the water will congeal the white from leaking out.
(2) Gently lower the eggs into the boiling water with a large slotted spoon and cook in the boiling water for 10 minutes.
(3) Remove the eggs from the water and place them into a bowl or plate for 5 minutes (they will continue to cook outside the water).
(4) Put the hard boiled eggs in a cold water bath to stop the cooking process.
