Here is an easy basic recipe for low carb chicken salad. This recipe is great as is or you can modify it based on your needs or what you have on hand. It is sure not to disappoint.
1 cup of this chicken salad has approximately 2.89 g. of net carbs.
This recipe makes about 3 cups of chicken salad.
1/2 cup of mayo (I used Duke’s brand because it has no sugar in it)
The juice of 1 lemon (this is about 1 tablespoon of lemon juice – adds 1 g. net carb)
1/4 teaspoon of pepper
1/4 teaspoon of poultry seasoning*
1/2 cup of slivered almonds (adds 6 g. net carbs)
2 large stalks of celery, chopped (adds 1.68 net carbs)
2 cups of chopped cooked chicken meat (I used the meat from a store bought rotisserie chicken; skin removed).
In a medium bowl mix together all of the ingredients except the chicken. Stir in the chopped chicken and serve.
*Poultry seasoning is generally a mix of sage, thyme and rosemary. If you don’t have “poultry seasoning” on hand, you can just use a mix of the spices.
