Pesto Stuffed Chicken Wrapped in Prosciutto (3 Easy Ingredients)

MAKE THIS!  Seriously….make this.

This simple 3 ingredient pesto stuffed chicken recipe seems soooooo fancy.  This is a great easy dish to serve any dinner guests and will make you seem like a culinary superstar, even if your not.  It only takes a few minutes to assemble and has only a trace amount of carbs. 

4 skinless, boneless chicken breasts (pounded flat)
1/2 cup of basil pesto (store bought or homemade)*
8 slices of prosciutto ham

Preheat oven to 400 degrees.

Spread about 2 tablespoons of pesto on each chicken breast.  Roll up the chicken and wrap each chicken breast in 2 slices of prosciutto to cover the entire breast. Place the wrapped chicken breasts into a greased baking dish.

Bake until the chicken is fully cooked (165 degrees – about 25 minutes depending on the size).  I use a meat thermometer to make sure I don’t overcook the chicken breast.

I have made this with store bought pesto and homemade pesto.  For store bought, I recommend the 3.5 ounce jar of Alessi Pesto.
