These low carb eggplant pizzas were quick, easy and delicious! I will definitely make them again! Eggplant is full of fiber so these help keep you full, especially when combined with the fat in the cheese which is satiating. Each eggplant pizza has approximately 4 g. of net carbs.
No sugar added marinara sauce (I used La Famiglia Del Grosso Sunday Marinara)
Cut eggplant into 3/4 inch thick slices. Sprinkle both sides generously with salt and let sit for half hour to draw the water out. After 30 minutes, wipe the eggplant dry with paper towels to remove the moisture and extra salt. Preheat your oven to 375 degrees.
