Low Carb Eggplant Pizza

These low carb eggplant pizzas were quick, easy and delicious!  I will definitely make them again! Eggplant is full of fiber so these help keep you full, especially when combined with the fat in the cheese which is satiating.  Each eggplant pizza has approximately 4 g. of net carbs.  

1 eggplant
olive oil
Shredded cheese
No sugar added marinara sauce (I used La Famiglia Del Grosso Sunday Marinara)

Cut eggplant into 3/4 inch thick slices.  Sprinkle both sides generously with salt and let sit for half hour to draw the water out.  After 30 minutes, wipe the eggplant dry with paper towels to remove the moisture and extra salt. Preheat your oven to 375 degrees. 

Place the eggplant on a greased baking sheet and brush the tops with olive oil.  Roast the eggplant for 25 minutes.  Spread 1 tablespoon of marinara sauce on the top of each eggplant slice, sprinkle with parmesan and shredded cheese.  Put pizzas under the broiler until the cheese is melted and slightly browned.  
This recipe is easily modifiable. You can add cooked meats, fresh herbs whatever you like!
