Low Carb Tortilla Soup!! Is that possible? YES it is! And you don’t even have to cook it! I can whip up this delicious soup in about 10 minutes start to finish.
I was out shopping over the weekend and saw a Vitamix high speed blender demonstration. The lady running the demonstration made tortilla soup and it was really good! She was kind enough to give me a copy of the recipe and I modified it to be low carb! You could make this low carb tortilla soup with any high speed blender.
No cooking for this soup is required! You just put your ingredients in your blender and blend away! As written below, each cup of soup has about 5 grams of carbs and 53 calories. This recipe makes about 4 cups of soup. It is filling and delicious. You could modify this recipe to meet your dietary goals and add cooked protein or shredded cheese to the final product. Maybe even some diced avocado or a dollop of sour cream.
1 medium roma tomato (6 g. net carbs and 35 calories)
1 medium celery stalk (.59 g. of carbs and 6 calories)
1 medium carrot (4 g. net carbs and 25 calories)
1 bullion cube (I used Rapunzel Organic – 0 carbs and 40 calories)
1/2 tablespoon taco seasoning (I used my all natural homemade taco seasoning)
2 1/2 cups of hot water
1/4 cup of corn [I used organic canned corn / drained] 7.5 g. net carbs and 40 calories
Small handful of greens [I used rainbow swiss chard, but spinach or kale etc. would work]
1 ounce of low carb chips [I used Sami’s Bakery millet and flax chips* (pictured)] 3 g. net carbs 66 calories
Load your high speed blender with all of the ingredients (except the texture ingredients). Run on high speed for 1 minute. Add texture ingredients and run on low speed #1 for 10 seconds. Enjoy!!
